What We Offer
At Del Prete’s Mobile Pizzeria, we offer a curated menu of fresh Neapolitan-style pizzas cooked in our ilFornino Professional Series Wood Fired Pizza Oven and our new Forno Piombo 120 Palazzo Wood Fired Oven. Reaching temperatures of up to 950º, this centerpiece adds a nice touch of ambience and creates an intimate culinary experience for your guests. Our pizza selections range from your traditional cheese pizza to several crowd-pleasers to a selection of specialty pizzas topped with a variety of interesting ingredients that are original, innovative and exciting. We offer several different types of in-house made base sauces, from our classic tomato sauce to our homemade pesto to our signature Chimichurri, or even a simple drizzle of our favorite olive oil from Ojai Olive Oil Co.
The Pizza Starts Here
The dough begins with the flour, and at Del Prete’s Mobile Pizzeria, we use only organic flour for our pizzas. We start with our 10 year-old sour dough starter, add the ingredients, mix out our final dough recipe, create the dough balls in exact weight proportions, and then refrigerate them. The two most important variables during the fermentation- temperature and time- work hand-in-hand, so we pay close attention to this part of the process. As one effects the other, we are vigilant to make sure the dough is perfectly proofed. Our dough-making process takes us around 48-72 hours. The fresh tomatoes and cheese that we use on our pizzas are locally grown and made in California, and we do our best to source all of our ingredients locally to create a fresh, flavorful pizza with every bite.
